Can't be Beet Salad




Get your veggies! My assistant, Natalie and I are trying to integrate veggies into our diet! I recently bought a jucier, the "Breville Juice Fountain". What a great product!
Easy to use and most important easy to clean! So for a snack every afternoon I juice up some kale, celery, apple, lemon, and cucumber...yummy and oh so healthy!

It occurred to me that beets are still a very unrated veggie. I make an amazing salad that I wanted to share with all of you. Try beets, and eat your veggies!

This salad looks amazing placed on a large white flat platter...

Can't be Beet Salad- Serves 6

6 beets, red and golden
1 small red onion, sliced into thin round rings.
6 cups mixed baby greens
1 pink grapefruit, peeled and sectioned, (Dole now offers peeled/ sliced grapefruit sections in the fruit fridge case in some groceries)
1 cup feta cheese
1 cup roasted unsalted almonds, rough chop

1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
1/2 lemon juiced
salt and pepper
1 bunch fresh thyme

Preheat oven to 400 degrees. Cut off the ends of the beets and place the beets on a baking sheet lined with parchment. Bake for 1 hour, or until soft to the touch. remove once baked and cool.

In on a large white platter, place a bed of baby greens, scatter the grapefruit sections evenly on the platter, scatter almonds, and red onion slices.

Peel cooled beets, ( you may want to use a paper towels to hold onto the beet, they will dye your fingers red, or yellow) cut into sections, or disks, and scatter on the platter with other ingredients.

Sprinkle feta cheese evenly over the salad.

Combine the vinegar, oil, lemon juice,add fresh thyme leaves, salt and pepper, whisk them together and pour evenly over the salad.

serve immediately.

* dressing can be made in advance, as well as the beets can be baked and sliced and stored in the fridge for up to 2 days.
