While in Des Moines, I prepared a wonderful simple and satisfying mushroom side dish to accompany our roasted rosemary chicken, served with peach chutney.
Mushroom and Onions~
Rinse and roughly chop 3 cups mixed mushrooms.
rough chop sweet young red onions, 1 cup
saute them in 3 tablespoons olive oil
salt and pepper, serve warm
6 fresh unpeeled Georgia peaches cut into 1 inch cubes
2 garlic cloves~ chopped finely
1/2 yellow onion~ chopped finely
3 tablespoons olive oil
1/4 cup red wine vinegar
4 tablespoons sugar
1/2 teaspoon salt
Saute onions and garlic, until transparent, add the peaches, vinegar and sugar.
Cook for 10 minutes and add salt.
let cool and serve as a side to Chicken or Pork.
